FSSC 22000 scheme: Food Safety System Certification

FSSC 22000 is the ideal tool for those companies that want to integrate their Hazard Analysis and Critical Control Points (HACCP) system with the requirements of UNE-EN ISO 22000: 2018.

There is a growing need for affordable, safe and sound quality food products. Based on this, the FSSC 22000 scheme offers the food industry a method to ensure food safety.

The FSSC 22000 scheme integrates the requirements of UNE-EN ISO 22000: 2018 “Food safety management systems” with those of the ISO / TS 22002 family “Prerequisite programmes on food safety” (ISO / TS 22002-1 (food), ISO / TS 22002-2 (catering), ISO / TS 22002-4 (packaging), ISO TS 22002-6 (feed), NEN / NTA 8059 (transport and storage) and PAS 221 (retail), including, depending on the sector, additional requirements established by the GFSI (Global Food Safety Initiative).

Its application can bring benefits to the organisation:

  • Regulatory and legislative compliance,
  • Improvement and further establishment of the Hazard Analysis System and Critical Control Points (HACCP),
  • Entry into new markets and customers (e.g. distribution chains),
  • By allowing integration with ISO 9001 or other ISO standards; it improves the definition of responsibilities, the determination of company processes and risk management,

The Scheme is intended for auditing, certification and registration of organisations within the following categories and (sub) categories of the food chain:

  • Raising animals for meat, milk, eggs and honey (with associated storage and packaging at the hatchery).

  • Fish and shellfish farming (with associated hatchery storage and packaging).
  • Processing perishable products of animal origin: slaughterhouse, deboning, gutting, cutting, sorting, washing, pasteurisation, trimming, curing, fermentation, smoking, freezing, refrigeration, cooling, blanching (E.G., fish, beef, meat poultry, eggs, cold or frozen dairy products, and fish or seafood products).
  • Processing of perishable products of plant origin: shelling, drying, packaging, sorting, washing, rinsing, water cooling, trimming, slicing, pasteurisation, roasting, blanching, peeling, shelling, cooling, refrigeration, freezing and the final product (e.g., cold or frozen): fresh fruits and juices, vegetables, grains, nuts and legumes, meat substitutes based on plant products, such as soy).

  • Processing of perishable products of vegetable and animal origin (mixed products): mixing, cooking, packaging, assembly, cooling, refrigeration, freezing (e.g., mixed products, pizzas, lasagna, sandwiches, stuffed dough, ready meals).
  • Processing stable products at room temperature: mixing, cooking, packaging, bottling, brewing, drying, pressing, grinding, mixing, roasting, refining, assembling, distilling, drying, canning, pasteurisation, sterilisation. Examples of end products: canned goods, cookies, bread, snacks, oil, drinking water, alcoholic and non-alcoholic beverages, pasta, flour, sugar, salt for food use, long-life dairy products, margarine.
  • Production of animal feed: Manufacture of one or more processed, semi-processed or raw products used to feed animals intended for food production.
  • Production of pet food (only cats and dogs): Manufacture of one product or several, whether processed, semi-processed or raw, that are used to feed animals not intended for food production, in this case, cats and dogs (e.g. dry and wet pet food, treats, refrigerated, frozen and room temperature stable food).
  • Production of pet food (for other types of pets): Manufacture of one or several products, whether processed, semi-processed or raw, used to feed animals that are not intended for food production (other than cats and dogs). E.g., dry and wet pet food, treats, refrigerated, frozen and room temperature stable foods).
  • Banquet service and prepared meals: Activities carried out in restaurants, hotels and canteens in workspaces; food handling at remote sites, transportation and direct delivery to consumers, activities developed in cafeterias, food trucks and catering services for events.
  • Retail and wholesale businesses: reception, collection, storage, display of food products, shipping, transportation and delivery (e.g. supermarkets, hypermarkets, convenience stores, warehouses, wholesale markets, department stores/membership stores, wholesalers that supply the restaurants).
  • Provision of transport and storage services for perishable food and perishable animal food: transport and storage at cool, cold or frozen temperatures, additional activities such as repackaging of already packed products, freezing and thawing.
  • Provision of transport and storage services for ambient temperature stable food and ambient temperature stable feed for animals: transport and storage. Additional activities such as repackaging of already packaged products.
  • Production of safe packaging and packaging materials: manufacture of plastic, cardboard, paper, metal, glass, wood and other materials that are used as packaging materials in the food industry (e.g. bottles, boxes, jars, barrels, corks, cans, devices for closing packaging, such as tape, plastic closures or any other product that the manufacturer can prove that belongs to food and pet food packaging, manufacture of labels that are placed directly on the food).
  • Production of biochemical products: Mixing, cooking, packaging, distillation, drying, canning, sterilisation of products at ambient, cold and frozen temperatures (e.g. final products: food and animal feed additives, vitamins, minerals, bacteria cultures, flavourings, enzymes and processing additives, gases used as ingredients and packaging gases).

Synergies
ISO 22000 projects allow their integration with any UNE-EN ISO standard (ISO 9001, ISO 14001, ISO 45001 ...). It is widespread to integrate it with the company's HACCP systems, with BRC Global Standard Food or IFS International Food Standard systems.
